Nukuta Nabe (温たなべ) is a distinctive handcrafted donabe developed by Marushige Touki in Japan’s Mino pottery region. Unlike conventional earthenware pots, Nukuta Nabe was created with a specially developed clay body and unusually thick construction, giving it exceptional heat retention and remarkable versatility.
Each pot is individually handcrafted in Japan and produced in limited quantities, making Nukuta Nabe a difficult-to-find piece even within Japan and especially uncommon overseas.
What Makes Nukuta Nabe Special
Dry-Heat Cooking — A Rare Feature for Donabe
Traditional donabe are generally not designed to be heated while empty. Nukuta Nabe is different. Its specially developed clay body allows dry-heat cooking, so ingredients can be grilled or sautéed directly in the pot—not just simmered in liquid. This unusual capability dramatically expands what a donabe can do.

Nukuta Nabe has undergone testing involving a 300°C temperature difference, demonstrating the unusual thermal durability of its specially developed ceramic body.
Handmade & Hard to Find
Nukuta Nabe is not mass-produced cookware. Each piece is handcrafted one by one, and production is limited by the time-intensive nature of the process. Certain sizes and patterns can sell out or require advance ordering in Japan.
Small variations in glaze, color, texture and surface character are natural results of the handmade ceramic process. Rather than imperfections, these differences give every Nukuta Nabe its own individual character.
